Here’s my favorite recipe for using up overripe bananas. We don’t make it often since it’s a special treat, but it’s our go-to banana bread, and I hope you love it as much as we do!
INGREDIENTS
- 3 over ripe bananas
- 6 T. melted grassfed melted butter
- 3/4 c. sugar
- 1 egg
- 2 t. vanilla*
- 1 t. baking soda
- 1/2 t. salt
- 1 1/2 c. organic all purpose flour
For the cinnamon swirl:
- 1/3 c. organic sugar
- 1 T. Vietnamese cinnamon*
Preheat oven to 325 degrees. Spray a loaf pan with oil, and set aside. Beat bananas in a large bowl, then add the melted butter, 3/4 sugar, egg, and vanilla, and mix well. Gently add in dry ingredients, and mix until just combined.
Put 1/2-3/4 of the batter into the loaf pan, then sprinkle all but 1 T. of cinnamon sugar mixture over the batter. Put the rest of the batter on top, and finish with the 1 T. cinnamon sugar.
Bake for 55-65 min, or until a toothpick comes out clean. Let cool for at least 20 minutes before slicing. Enjoy!
*Good vanilla and good cinnamon are so important when you are baking! I’ve linked my favorites above.
